I had just started "mowing" (ahem, more like scalping...) my lawn, when I realised it was riddled with tender young dandelion leaves. So I have picked a huge handful. I'm not a huge fan of lots of bitter leaves in salad (same as spicy ones, a few are fine but too many can be a bit overpowering) but I do like cooking with them. I'm thinking they will go nicely with my chard and pea-shoots wilted into some pasta with some peas and spring onions (from the supermarket).

plenty of salad
Everything picking up in the garden now thanks to the glorious sunshine we've had recently!
3 days worth of tender, mixed salad leaves: beetroot greens from my overwintered batch which have done very well, lots of rocket and beautifully fragrant herbs: parsley, mint, thyme. Better than anything you can buy in the shop, producing delicious, fragrant and crispy salads!
