The recommended method of killing them humanely is to shoot them, but my dad says it takes him about 3 goes with his air rifle. So how can that be humanely? Before that he used to drown them until he found out that that wasn't allowed

If there shot in the head it's instant death the kicking and squirming is down to nerves

Air Rifle the surest method. Head shot for a clean, one shot kill. If you're not such a great shot, a trap and an air rifle. As VC says, once caught the law states the squirrel must be destroyed. For all their antics, they're vermin and very destructive. I must've taken out 80-90 or so in the last eight years; a drop in the ocean even in the local population.
A very effective, short term fix to keep them off of a bird table is to fix a bell cloche around the pole and under the table top (so long as there aren't trees / shrubs near by that the squirrel can climb instead and jump from).
