I understand you can store carrots by layering them in a box sandwiched between peat; Can anyone please elaborate on this. Ie do u dry the peat first? presumably you remove carrot tops? Any advise appreciated

You certainly can store them in this way. Either layered in peat or compost or sand (all kept slightly damp). However the carrots to be stored would have to be mature (big ones) as opposed to nice tender little ones. Personally I never have enough carrots to store, and as they are fairly hardy I would tend to leave them in the ground and dig as needed.
