    Need some advice on lazy garlic please...
    I intend crushing the garlic and adding white wine vinegar. Do you crush the garlic once thoroughly dried or are you able to crush it "in the green"? Do you add the WWV after you have pretty much a jar full of garlic first? Or is it a specific recipe like two parts garlic to one part WWV type thing?
    Sorry to ask some dumb questions, but I have never made this before and thought I would do it with my hard neck Early Purple Wight, which is still drying - it is taking a while!

    I just pop what I've got into the food processor - peeled and trimmed - cover with WWV and whizz. Then pop into a jar. It doesn't have to be dried as such - that's only if you want to store it 'braided' or loose.

        OK peeled, brendered and two jam jars full of lazy garlic. Now, how long does it last? I've done the Albigensian and Early Purple.

                No, not at all. I have a very small tea strainer that I usually use to strain tomato seeds in after fermenting, so I often take out the garlic with that and leave most of the vinegar in the jar. But that's just me!

                    Does the jar need to be sterilised and should it be kept in the fridge ?
                    This sounds an excellent way to keep our crappy garlic , much better than freezing.
